This edition will feature various bars, restaurants, and gastro-bars in Galapagar, presenting a wide range of dishes that reinterpret oxtail. The proposals span from classic cuisine to innovative and avant-garde versions, solidifying these days as a benchmark gastronomic event in the town.
Among the registered establishments are Finca Trinidad, Imperial, Esquina 29, Sacromonte, Tony’s Bar, La Palomera, La Carrera de Lula, El Figón, Asador del Parque, Garnacha, La Santina, El Tablao, Viva Galicia, Taberna Triana, La Casona del Pastor, Esencias de España, and Vino Pasión.
The culinary offerings are diverse, including traditional braised oxtail in restaurants such as Imperial, La Carreta de Lula, or El Asador del Parque. Classic versions like Cordoban-style oxtail from Finca Trinidad or stewed ox oxtail from La Santina will also be available.
For more adventurous palates, there will be creative preparations such as the oxtail ingot from El Garnacha, brioche with foie gras from El Figón, or artichoke flower from Taberna Triana. Additionally, more casual formats like burgers at Vino Pasión, soupy rice at El Tablao, or croquettes at bars like La Oficina, Tony’s Bar, or Esquina 29 will be offered.
All participating establishments will serve their dishes during lunchtime hours. However, Vino Pasión and Esencias de España will extend their service to evening hours as well, providing more opportunities to enjoy these specialties.
