The delegate of Culture, Tourism and Sport for the Madrid City Council attended a culinary demonstration highlighting the capital's rich gastronomy. The event, part of the San Isidro 2026 Festivities program, took place at a well-known city restaurant.
During the event, a Madrid-born chef, recognized with a Michelin Star and two Repsol Suns, presented an updated version of the traditional 'bocadillo de entresijos'. This proposal aims to elevate traditional 'castiza' gastronomy with a contemporary approach, reflecting the innovative spirit of the festivities.
“"Gastronomy is an essential part of our identity, and the proposal is the best example of how the most traditional flavors can dialogue with current haute cuisine."
The chef emphasized that this reinterpretation of such an emblematic dish is a tribute to Madrid's cuisine, maintaining deep respect for local produce and culinary roots. He highlighted that Madrid possesses a unique recipe book and that updating its classics demonstrates how tradition can evolve without losing its essence.
“"Reinterpreting a classic like the 'bocadillo de entresijos' is a way to pay homage to Madrid's cuisine with absolute respect for the product and our roots."
The San Isidro 2026 program offers a varied agenda of cultural, musical, and gastronomic activities across various locations in the city, inviting the public to enjoy both deeply rooted customs and new interpretations.
