This initiative is part of the Sustainable Tourism Plan and aims to promote experiential gastrotourism, highlighting the natural and culinary heritage of the region. The project's main goal is to foster the conservation of the agricultural landscape in the municipalities of the Commonwealth, supporting local producers and hospitality establishments.
The workshop will include a guided walk through the surroundings of Patones de Abajo, where ethnobotanist Laura Aceituno Mata, a research scientist at the Royal Botanical Garden of Madrid – CSIC, will lead participants in identifying wild edible plants and understanding their relationship with the ecosystem. Afterwards, a practical workshop will be held on the uses and processing of these species.
The essential objective of this project is to convey the importance of valuing and conserving the agricultural landscape of all the towns in the Commonwealth, supporting traditional products, hospitality establishments, and local producers' projects.
The event will conclude with a tasting of recipes prepared with seasonal wild plants, led by chef Laura Negrete. This activity will feature the collaboration of members from CSA Vega del Jarama, an agroecological project, and the Asociación La Troje de El Berrueco, dedicated to researching and recovering local varieties and traditional agricultural knowledge.
The workshop, running from 10:00 AM to 4:00 PM, is free but requires prior registration due to limited spaces. The meeting point will be Patones de Abajo Park, at the corner of Calle de los Diezmos and Avenida de la Cerrada. This activity is integrated into the Sustainable Tourism Plan in Destination of the Mancomunidad del Embalse del Atazar “Comarca del Agua”, funded by the Secretary of State for Tourism, the General Directorate of Tourism and Hospitality of the Community of Madrid, and the Commonwealth itself.
