Madrid has welcomed TOVA Bakery, an establishment redefining the capital's pastry offerings. Located at Calle Alonso Cano, 30, this bakery presents itself as the first with Jewish, Mediterranean, and Middle Eastern inspiration in the city. Behind this project are Tamara and Luis, known for their previous venture, Mazál Bagels.
TOVA Bakery, whose name means 'good' in Hebrew, aims to surprise Madrileños with a unique proposal. Alongside iconic products like burekas, rugelach, babka, and challah bread, the bakery also offers classics such as French and Danish pastries. The official opening took place on May 26th.
The star of the menu is the burekas, savory filo pastry pockets filled with cheese or spinach, served with tahini, spicy tomato dip, and homemade pickles. TOVA has innovated with a spiral version, which has already become their signature.
Other notable treats include the dark chocolate rugelach and the babka, a brioche dough braid with infinite layers of filling. The challah bread, tender and slightly sweet, is presented as a comforting breakfast option. The selection is complemented by seasonal laminated pastries and vegetarian sandwiches that rotate weekly, adapting to the bakery's daily production.
The beverage selection features the refreshing grapefruit gazoz with unlimited refills, mint lemonade, and iced raspberry tea. For coffee lovers, they offer 100% arabica coffee, latte, and iced latte, described as the coffee that grandmother Tova would approve of.
In celebration of its opening, TOVA Bakery is offering a free drink with the purchase of a bureka, a promotion valid from June 3rd to June 14th. To redeem it, customers must mention "I LOVE TOVA" or "ME ENCANTA TOVA" at the counter.
The concept behind TOVA is inspired by childhood memories and the generosity of grandmothers who cooked with skill and tenderness, without needing exact recipes. Tamara and Luis aim with this project to recreate that feeling of sharing a table and good moments.
