Madrid's Salón Gourmets Boosts Regional Agri-Food Industry

The 39th edition of the event, inaugurated by Carlos Novillo, highlights the potential of over 40 Madrid-based companies with the M Certified Product seal.

The 39th edition of Salón Gourmets, one of Europe's most significant food sector events, has been inaugurated at Ifema Madrid, showcasing the participation of over 40 regional companies under the M Certified Product distinction.

The Minister of Environment, Agriculture and Interior of the Community of Madrid, Carlos Novillo, presided over the opening of this key event for the agri-food industry. During his speech, Novillo emphasized the strong support of the regional government for this sector, recognizing it as a "driver of economic development, innovation, and job creation."
The dedicated regional space at Ifema Madrid spans over 800 square meters and is presented under the M Certified Product brand, a seal that guarantees the quality and origin of food products from Madrid. A total of 41 companies are exhibiting a vast range of products, from wines, beers, and oils to meats, cured sausages, sweets, cheeses, fish, bakery items, and beverages such as coffee, tea, liqueurs, and vermouth. Quality designations like the Vinos de Madrid appellation of origin are also present.

The institutional stand features its own stage where, over the four days of the fair, various activities will take place. These include tastings, presentations, and culinary demonstrations, some led by chef Fernando del Cerro, ambassador for M Certified Product in 2026. Among the most anticipated events are the 5th Official Championship of Tapas and Pinchos of the Community of Madrid, promoted by Hostelería Madrid, and a competition to award the best tripe dishes in the region, organized by Acyre. A presentation of the traditional San Isidro doughnuts by Asempas will also be held.
Additionally, the space includes an area for professional meetings, facilitating contact between Madrid producers and international distributors, with the support of the regional agri-food cluster. The popular Wine Tunnel, coordinated by the regulatory council of the DOP Vinos de Madrid, is also making a return.
The Imidra will present innovative proposals demonstrating the role of science in transforming the sector. These include a white vermouth made with local varieties, a kefir-based cream cheese, a plant-based alternative to animal fats, a sweet paste created from cocoa by-products, and a yogurt enriched with watermelon juice from agricultural surpluses. New creations such as the Smoked Violet Vermouth, developed with Licores Trampero, will also be unveiled, and two technical sessions will be held focusing on innovation, sustainability, and current challenges in the agri-food industry.
