The House of Culture in Villanueva de Perales hosted the grand finale of the gastronomic competition, where the restaurant Casa María, with its ‘Ensaladilla Madrileña Casa María’, was declared the winner. The salad is prepared at their establishments in Cava Alta and the Mercado de Antón Martín.
The initiative, promoted by La Garbancera Madrileña, aims to encourage the consumption of Madrid chickpeas, support local hospitality, and promote proximity products. The secretary of La Garbancera Madrileña, Toni de la Morena, along with president José Brunete and several mayors, presented the award.
Casa María expressed its gratitude and encouraged the consumption of Madrid chickpeas, highlighting their quality and integration into the salad. The second prize went to the restaurant La Abuela Lola, from Boadilla del Monte, for their salad with avocado and prawns.
During May, June, and July, participating restaurants offered various versions of the recipe, using chickpeas as the main ingredient and a vegan mayonnaise sauce. Proposals included ingredients such as octopus, salmon, and vegan options.
The event has a dual objective: to promote Madrid chickpeas and support local hospitality, while also valuing proximity products and the work of local farmers. The Villanueva de Perales City Council emphasized the importance of such initiatives for revitalizing municipalities and promoting Madrid's gastronomy.
