The Association of Artisan Pastry Entrepreneurs of Madrid (ASEMPAS), in collaboration with the Regional Government of the Community of Madrid, has launched the creation of a commemorative dessert for the upcoming visit of Pope Leo XIV to the region.
Named "Cor Unum"—a Latin expression meaning "one heart," evoking the spirit of fraternity and unity in Augustinian tradition—this sweet tribute aims to become a gastronomic symbol of welcome and celebration. The dessert, inspired by the Pope's belonging to the Order of Saint Augustine, merges Madrid's pastry tradition with religious symbolism.
The "Cor Unum" is made with two layers of classic butter sablé dough, joined by a smooth lemon cream and homemade strawberry jam from Aranjuez, incorporating an emblematic local product from the Madrid region. It is finished with a thin white chocolate coating and decoration in yellow tones, representative colors of the Vatican. A gluten-free version will also be available.
To bring this creation closer to the public and highlight artisanal pastry making, ASEMPAS will share the recipe with the artisan pastry guild of the Community of Madrid, allowing it to be purchased at various artisan bakeries in the region during the papal visit.
To promote this initiative, ASEMPAS, with the support of the Community of Madrid, will offer a free tasting on Saturday, June 6, and Sunday, June 7, at the Puerta del Sol Tourist Office.
Through this offering, Madrid's artisanal pastry sector pays homage to Pope Leo XIV with a product that represents tradition, hospitality, and the expertise of the artisanal pastry chefs of the Community of Madrid.
