Madrid has welcomed Burekísimo, the city's first burekería, bringing Balkan gastronomy with an artisanal and healthy street food proposal, located in Plaza de San Ildefonso in Malasaña.

Madrid's international gastronomic scene is enriched with the opening of Burekísimo, a pioneering establishment introducing burek, a baked product of Ottoman origin, widely consumed in the Balkans, Asia, the Middle East, and North Africa. This new concept aims to fill a gap in the capital's culinary offerings, where Balkan tradition has had limited presence until now.
Burek is characterized by its thin and crispy dough, made with layers of filo and filled with ingredients such as meat, cheese, or vegetables. It can be presented in a rolled or spiral format, forming a cornerstone of these cuisines due to its versatility and daily consumption.
Since its arrival in the Madrid market, Burekísimo positions itself as an innovative proposal in Spain, aiming to popularize this still little-known product. The project is based on an artisanal production model, with daily preparation and continuous baking, integrated into a contemporary street food concept.

Furthermore, it reinterprets burek by incorporating influences from Turkish and Middle Eastern cuisine, creating a fusion of gastronomic traditions that continuously evolves with new fillings each month.
Burekísimo's approach is the result of years of research and travel through the Balkans, Turkey, and the Middle East by its founder, who has developed her own vision of the product, reinterpreting it from a healthier perspective without losing its essence. The proposal includes vegan and vegetarian options, demonstrating that street food can be honest and healthy without sacrificing its authenticity.
Located at Plaza de San Ildefonso 5, in the heart of the Malasaña neighborhood, Burekísimo has been well-received since its opening in December 2025, establishing itself as one of the emerging proposals in Madrid's gastronomic scene. The project also offers delivery service, making its artisanal street food accessible throughout the city.
